Ube Mai Tai

Purple cocktails are where it’s at for Spring Drinks! So what is Ube? Ube is a purple tuber, closely related to yam and taro. Ube is actually the Tagalog word for “tuber”, and you’ll see Ube used in Filipino pastry quite often. What does Ube taste like? Heaven. But if that’s too broad, it specifically has a nutty vanilla quality with earthy undertones. Ube syrup is quite hard to come by here in the US, so I decided to add it to my line up of Savidge Kitchen Syrups. You can shop those here!


For this delicious Ube Mai Tai, the Ube syrup replaces the Orgeat syrup that is traditionally found in a Mai Tai.

UBE MAI TAI

  • 2oz Rum (I used the 896 Barbados Dark Rum)

  • 0.75oz Cointreau

  • 0.75oz Lime Juice (Fresh is best)

  • 0.75oz Ube Syrup 


Add all ingredients to a shaker with ice and shake for 20 to 30 seconds. Pour into a glass with crushed ice and garnish with fresh mint and a lime wedge. This drink is seriously stupid good!
