Coconut Crush

This decadent Valentines Day dessert cocktail may be the very best dessert cocktail there is. Pomegranate, coconut, white chocolate and a tiny bit of citrus really make this recipe shine. And of course, pink. Because, pink. Valentines day doesn't have to be all about your significant other! It can be about coconut. And rum. And coconut rum.

Let’s talk about pomegranate and pomegranate cocktail for a second. Real grenadine is made with pomegranate juice and orange blossom water, not cherries, and definitely not corn sryrup. It’s a question we’re asked all the time, and we’re on a mission to disabuse the world of the notion that grenadine is a gross cherry syrup. Try the Savidge Kitchen Grenadine. It’s a balanced “rich” syrup that will make you sad you ever tried anything with a certain flower on the label…

COCNUT CRUSH INGREDIENTS

  • 2oz Coconut Rum (I recommend Shipwreck, by Brinley Gold)

  • 2oz Coconut Cream (unsweetened)

  • .5oz Cointreau

  • .5oz Grenadine (aka, pomegranate syrup)

  • .5oz Lemon Juice

Shake over ice to incorporate all ingreients, then strain into coupe. This photo shows the cocktail garnished with a melted white chocolate rim, and rose petals… just in case you want to go that extra mile ;)

Grenadine or Pomegranate Syrup? Maybe we should rename this lovely little sweetener!
