Bourbon Banana Bread
Get your heart meds out- this one is going to be real serious. Today we're making Bourbon Banana Breads, two ways. One Bacon banana bread, and one Chocolate Banana bread, but both with bourbon. Obviously. Have we met? The Bacon Banana Bread has bourbon in the banana bread batter, and is topped with a bacon that has been candied in bourbon and honey. The Chocolate Banana bread also has bourbon in the batter, along with chocolate chips, and then a bourbon sugar glaze drizzled over the top. They're both outrageous. Recipe below!
I used the same batter for both, and simply divided it into two small (8x4) baking tins.
BOURBON BANANA BREAD BATTER:
4 Past-Ripe Bananas
2 c Flour
1 c Brown Sugar
1 tsp Baking Powder
Pinch Salt
1/2 c Coconut Oil
1/4 c Bourbon
2 Eggs
Additions for Bourbon Chocolate Banana Bread:
1/2c Chocolate Chips
(Topping)
1 c Powdered Sugar
2 oz Bourbon
For topping, simply whisk together sugar and bourbon. Let bread cool before pouring over top.
Additions for Bourbon Bacon Banana Bread
(Topping*)
1/2 lb diced thick cut bacon
2-3 oz Honey2-3oz Bourbon
*Note, don't add bourbon bacon crumble to bread until last 10 minutes of baking. For bacon crumble topping, render bacon till cooked through. Add honey once cooked, stir and remove from heat.
Depending on which bread you make, either top with bacon crumble, or bourbon sugar glaze. Enjoy!
