Coconut Rum & White Chocolate Campari

Are you ready for Pink Drinks? It’s that time of year again - love is in the air and cocktails are pink! Valentine’s Day cocktails are always fun, but really, these pretty pink cocktails are delightful no matter the occasion. 

This drink is a super fun Coconut Campari cocktail. This cocktail isn’t overly bitter because the sweetness of the other ingredients really balance it out. 

PINK RUM COCKTAIL

  • 1.5oz Full Fat Coconut Cream

  • 2oz Coconut Rum (Shipwreck is my favorite - Try and be a little better than Malibu)

  • 1oz Creme De Cacao 

  • 10mL of Dr. McGillicuddy’s Mentholmint (Or another mint element)

  • 0.5oz Campari 

  • 0.5oz Lemon Juice


Add ice to a shaker and give all of the ingredients a really good shake. Strain over pebble ice in a glass and garnish with fresh mint and some chocolate covered mint leaves for that extra wow factor!
