Bourbon Bacon Jam
I know I'm usually here mixing cocktails, but today I'm showing you how to make Bacon Jam, in all it's glory. This is a favorite holiday treat, and not so far from my usual since we'll be cooking with booze! So buckle up, grab your cholesterol meds, and get ready for the best holiday gift in a jar EVER.
BOURBON BACON JAM RECIPE
1.5 lb Thick Cut Bacon (Sliced)
3 Vidalia Onions (Medium Diced)
1 C Brown Sugar
¼ C Mr. Black Coffee Liquor (Or Black Coffee)
¼ C Apple Cider Vinegar
2 tbs Noble Oak Bourbon
1 tbs Salt
1 tbs Ground Black Pepper
1 tbs Whole Mustard Seeds
1 Pinch of Cayenne
In a large heavy skillet over medium heat, brown the bacon till just before crisp. Remove with a slotted spoon and leave at least 2 tbs grease in the pan.
Add diced onions to pan and allow to caramelize (15-20 min). Once caramelized, return bacon to pan, stir in brown sugar & spices.
Once incorporated, add coffee liqueur and bourbon, turn up the heat and stir for a few minutes. Bring to a simmer, reduce heat and let mixture reduce until desired consistency (it should cling to the back of a spoon with a slow drip).
Let cool before transferring to 32oz mason jar. Enjoy!
